He has performed stunts in notable films including The Benchwarmers, The 40-Year-Old Virgin, Deja Vu, and Rat Race. In addition to his stunt work, Gilbert has been credited as an actor in Beverly Hills Cop III, Charlie's Angels, and Today You Die. He also worked as a stunt coordinator for Stunthero and Bloodhounds. His expertise in stunts earned him a nomination for Overall Stunt by a Stunt Man for Torque.
